Shepherd Sweet Pepper (Capsicum annuum)
A classic variety well-adapted to Canadian gardens, the Shepherd sweet pepper matures in about 120 days and is known for its tolerance to chilly nights. Plants grow about 2 ft. tall, leafy and sturdy, with a strong woody stem. When picked regularly, they produce heavy yields continuously until frost.
Fruits are medium-sized (4–4.5 in. long), with an attractive conical shape. They ripen from dark green to bright red, with thick, crisp, juicy flesh and a mild, sweet flavor.
A rich source of vitamins A and C, Shepherd peppers are prized for their versatility in the kitchen. Their thick skin and small seed cavity make them particularly excellent for stuffing, while also being great for salads, roasting, and fresh eating.
